These 20 minute fajita burrito bowls are vegan, gluten free, and the perfect quick dinner! Filled with plant based protein, healthy fats, complex carbs, and flavor, these are perfect for a satisfying meal.
I’ve always been the person that prioritizes long term safety > short term happiness when it comes to money. This is all due to my parents, who have never been huge spenders. From the get go, I was taught how to find a good sale, how to decipher what sales REALLY mean, and why you don’t need lavish things to be happy. At first, I resented them for not buying me a flip phone at the age of six when all my friends had them, but looking back, it was one of the best decisions I’ve ever made.
All my life, I’ve hated shopping, because I felt it was unnecessary and I could save the money for bigger and better things. This mindset has been poetically strong recently, as I am going to college soon and money will become more of an issue. I’ve also learned that eating at home is much better than going out, because you save money and you know where your food is coming from. PLUS, it’s fun to cook, right?!
When I’m with my friends and we’re trying to decide where to eat, I ALWAYS suggest Chipotle. Chipotle is one of the few fast food places I will eat at, because I know I’m getting a filling, delicious meal that’s way better then anything I could get at McDonalds. However, if you’re like me and you like to LOAD up the bowl with guac and all that shizzzzz, then you’d relate to that sad feeling when you see the $11 bill at the register (not to mention, the portion control is CRAZY). So, I’m determined to recreate their burrito bowls at home.
The star of their bowls are ALWAYS the fajita veggies, which I always get extra of. Then, we have the protein, and if you’re like me, you stick with the classic black beans and brown rice. Today I was feeling lazy, and used VeeTee Brown Rice, which is an absolute LIFESAVER. VeeTee sells packs of microwave rice that is great for meal prep, and is truly a lifesaver. Microwave packs are the best for lazy people, because they’re easy and give you a filling meal.
So, you add the rice beans, fajita veggies (star of the show!), GUACCCCC, salsa, cilantro, squeeze of lime, and BOOM- fajita bowl. Oh, and I tried to recreate their chunky, mild salsa, which I’m obsessed with. Not kidding when I say this is my new go-to meal. DO IT.

- Fajita Veggies:
- 1 red bell pepper, thinly sliced
- ½ yellow onion, sliced
- 1 tbsp olive oil
- ½ tsp sea salt
- ½ tsp cumin
- ½ tsp chili powder
- For the salsa:
- 1 roma tomato, diced
- ½ cup cilantro, sliced
- ½ red onion, diced
- ½ tsp sea salt
- 2 tbsp lime juice
- For the bowls:
- 1 pack VeeTee Brown Rice (brown rice of choice)
- 1 cup black beans
- Pre-heat a skillet over a stove top to a medium heat, and melt the olive oil.
- Add on the yellow onion and bell pepper. Sauté for 10-15 minutes, until tender. Add on the spices and cook for an additional five minutes.
- Meanwhile, prepare the salsa by adding all the ingredients into a bowl and combine well. Set aside.
- When the vegetables are ready, divide into the bowls with the brown rice, black beans, salsa, and guac. Sprinkle with cilantro and enjoy!
