I’m obsessed with rainbow bowls! They’re so easy to make and there’s so many ways you can make them unique! While I love making mine raw and/or vegan, I also love adding some sort of protein.
Ingredients (Serves one):
Kale, Arugula, and/or Spinach
Veggies of choice (I used zucchini, celery, red bell pepper, onion, and brussel sprouts)
Barley, Qunioa, or whatever grain you'd like (This steps optional, but it adds more to the bowl in my opinion!) Protein of choice (I used shrimp, but you can use tofu, chicken, whatever your heart desires!)
1 tsp oil of choice (Optional, but it makes the veggies kind of crunchy, which I love!) Spices- I use garlic powder & old bay, but if you prefer other spices, that's fine!
Preheat oven to 350ºF
In a bowl, toss your veggies in 1 tsp of oil (I use olive oil, but whatever oil works) and your garlic powder. Use a spoon to mix it all together, and mix it well.
On an oven safe pan, lay your veggies out, and stick in oven for 15-20 minutes, depending on how crispy you like them.
While those are cooking, coat your protein in your spices- I used old bay for my shrimp because I think it adds a nice flavor. Heat your pan onto a medium heat, and spray some non stick cooking spray on it. I can’t stress how important the non stick spray is! Cook your protein until you’re satisfied with it- I like mine crispy.
In a bowl, place a bed of either arugula, spinach, kale, or whatever you want into it. Once everything is done, simply place it all in the bowl, add your dressing, and devour!
