These Chocolate Rice Crispy Bars are four ingredients, full of flavor, and vegan! They come together in under an hour, taste amazing, and are filled with sweetness and chocolate.
Did any of you play soccer growing up?
I did, and I SUCKED. All caps there for a reason. I stood in the middle of the field and cried my eyes out because I didn’t want to run, and my parents had to stop my games on multiple occasions to put me in a time out. That didn’t stop my coaches from consistently playing me, even though I was terrible and refused to move an inch. THEY PUT ME AT MIDDLE. WHO PUTS A KID WHO HATES RUNNING AT MIDDLE.
The only reason I stuck with soccer for two reasons was because of this mom named Patricia. I never learned her last name, and I think I hated her daughter, but none of that mattered, because she was always in charge of snacks. You wanna know what snack she brought every time without fail? Rice crispy bars. The gooey, sugar and marshmallow filled bars that made my heart swoon and my stomach growl. I would down three during the game- one before, one at half time, and one afterwards. Hey, all that crying requires fuel.
Patricia fueled my sweets loving, fat self like nobody else. My parents never fed me rice crispy bars, so she was my only source. However, once I turned six, I realize my love of sugar was not worth the running and blisters from the cleats. It’s a good thing I discovered ice skating a few years prior, because I clearly was not cut out for the soccer life.
It’s funny looking back on how different I was when I was younger. I loved sugar and hated running. Now? Well, I still hate running, and like sugar, but only in the natural form. The other day, my inner five year old came out strong, and I was craving nothing but rice crispy bars. Not just any rice crispy bars, but chocolate chip flavored!
So, I put my thinking cap on and came up with these bad boys, which are absolutely delicious and the perfect treat. For the rice crisps, I used One Degree Organic Sprouted Brown Rice Cacao Crisps, which are my favorite kind of crisps. - 1½ cups chocolate brown rice crisps
- ¼ maple syrup
- ½ cup peanut butter
- ½ cup dark chocolate chips- divided
- Turn a sauce pan to a low heat, and melt the maple syrup and peanut butter together for 2 minutes, Turn the heat off and add ¼ cup of chocolate chips. Mix until melted in.
- In a large mixing bowl, add the rice crisps, remaining ¼ cup chocolate chips, and pour in the batter. Mix together until well combined. Press the mixture into a 9x13 pan and freeze for 2-3 hours.
- Cut into 9 squares and enjoy!
