This almond butter chocolate chip granola is vegan, gluten free, full of flavor, and the perfect breakfast! Pair it with some almond milk and fruit for an easy meal that leaves you satisfied, or you can top it on yogurt, oatmeal, smoothies, or potatoes!
Hi everyone! How are you?
I hope your week is treating you well, and you haven’t felt overwhelmed yet. I know that school is starting for most people (myself included), so it can be hard to calm down and remember everything will be okay. I’m overwhelmed with starting college, trying to find my place, and figuring out everything (the only thing I’ve memorized is the route to the gym and the local grocery store). My sleep schedule has defiantly changed, and I don’t think I’ve sat down for more than 5 minutes in a while, but it’s worth it.
So, if you’re overwhelmed and feeling anxious, take a breath and remember everything will be okay. We all go through this and I have full faith you’ll make it out. This kind of pressure and anxiety comes when the school year starts, so you’re not alone and it will get better. With that being said, let’s talk granola!
I was never a huge granola fan. Too many ingredients, too expensive- the list goes on and on. I’m very picky when it comes to my granola, so when I find one that I like, I stick with it. This recipe was originally a peanut butter cup granola, but then I said the heck with it and used almond butter. The verdict? Holy cow.

The basis of this granola is simple- oats. DUH. I haven’t experimented with paleo yet, but that’ll be coming soon. I know I’ve been doing lots of sweet recipes recently, but trust me guys, this granola is worth it. Plus, it’s vegan, gluten free, refined sugar free, protein packed, and DELICIOUS. There’s tons of almond butter and chocolate involved, and the coconut sugar adds the right amount of sweetness.

- 2 cups rolled oats (GF if necessary)
- ¼ cup almond butter
- 2 heaping tbsp coconut oil
- 3 tbsp maple syrup
- ½ tsp sea salt
- ⅓ cup chopped almonds
- Pre-heat your oven to 350.
- Stir together the almonds, oats, and sea salt.
- In a sauce pan, melt the maple syrup, oil, and almond butter together until combined. Once done, let cool and pour over the oat mixture and combine well.
- Cook for 15 minutes, then stir the mixture around (IMPORTANT) and cook for 5-10 more minutes.
- Remove, let cool for 15 minutes, then add in the chocolate chips. Enjoy!
