Happy Tuesday, friends! Did you all have a good weekend? I had a GREAT weekend- hung out with my friends, ate some good food, drank a little- the whole college shebang. THEN… Sunday night, I developed norovirus. Well, I don’t know for sure, but it’s spreading throughout all the freshman dorms, so it’s either that or a really bad stomach bug. I spent most of yesterday in bed sleeping, then had to drag myself out to go to a few meetings and classes, because finals start on Friday… it’s gonna be a great week, friends!
Oh, and in case you were unaware, I’m the Boulder rep for the coconut cult scavenger hunt, and today is the day! If you’re a student at CU Boulder or live in the area, keep your eyes peeled for the location 😉 Anyways, on to today’s recipe!
When it comes to protein bars, I’m a bit of a snob. I like my ingredients simple and readable, but I’m not willing to splurge $4 on one. The most I spend? $2, and MAYBE $4 or $5 if they’re on sale. When I go to grocery stores, I always scope out the bars section, just incase there’s a sale I missed.
I never realized how much I ate protein bars until I got to college, when my days became filled with sorority meetings, studying, blogging, homework, and running from place to place. Life is crazier than I ever thought it would be, and while I love staying busy, it can get overwhelming.
I always have snacks on hand when I’m on the go, and when I’m back at my dorm, I make sure they’re accessible. I’m one of those people that when I get in the groove of something, I’m in the ZONE, and you better not mess with it. The last thing I need is my stomach grumbling, ya feel?
Since I hate spending money on bars, but I eat them so much, I decided to come up with my own version! These 5 ingredient peanut butter protein bars are vegan, gluten free, paleo friendly, refined sugar free, and DELICIOUS. I’m talking easy, accessible, cheap ingredients that you probably already have on hand.
The base is peanut butter, followed by some maple syrup, protein powder, coconut flour, and a little almond milk. Oh, sea salt + cinnamon, so I guess these are seven, but I don’t count those. For the protein powder, it’s completely up to you- if you’re vegan, I’ve tested these with vegan protein powders and got the same result. I’m not sure about whey protein, but if you have success, let me know!

- 1 cup creamy peanut butter
- ¼ cup coconut flour
- ⅓ cup maple syrup
- ⅓ cup almond milk
- 2 scoops protein powder
- ½ tsp sea salt
- ¼ tsp cinnamon
- In your food processor, process all the ingredients, and add in the milk as you go.
- Grease an 8x8 tin with cooking spray, and pour the mixture into there. Freeze for one hour.
- Cut into 6-8 bars and enjoy!
