It’s been a while since I’ve done one of these, hasn’t it?!
My life hasn’t been too interesting as of late, with school and all. I took a break from these and What I Ate Today’s because honestly, I kept forgetting to take photos! I know, I know- I’m a bad food blogger. Well, I’m back at it today with a day in my life, so let’s begin.
I woke up around 7 AM, and did a quick cardio + ab work session. Something to get my blood moving, and since I’m still working my way back into working out, I’m trying not to push myself.
Afterwards, I had my beloved coffee time. If you’re curious, my coffee time is where I catch up on all my social media and drink my coffee while doing so. I take about an hour to do this, and it truly makes a difference in my day!
Afterwards, I prepped a little breakfast and continued watching the bachelorette (I’m still trying to finish the first episode… I know, I’m so slow!) Then, it was off to my first ever yoga class (!!!!!!).
Breakfast was greek yogurt on Ezekiel bread with cacao nibs, banana, hemp hearts, and copious amounts of almond butter.
I’ve been super stressed lately, and I wanted to give it a shot. I’m so grateful I did, and I detail my experience here in this post. I love the class and cannot wait to go back!
Afterwards, I had a GoMacro bar to refuel because even though it was a level one class, it was INTENSE.
After I drove home, I sat myself down with more coffee (yes, I have a problem), and worked on college stuff. WOOOOO!!!!! I started my “Why ___” statements for some schools, and continued fixing my personal statement.
After about an hour of doing that, I put that aside for the day and worked on some blog posts! I also responded to emails, contacted companies, and thought out my next few recipes. Get excited people!!

Yeah, so around 1:30, I got a bit hungry. And by a bit… I mean a lot. I whipped up this simple buddha bowl, because I feel like that’s all I eat.
The fix-in’s included roasted carrot, quinoa, roasted chickpeas, raw bell pepper, avocado, and a sprinkle of hemp hearts!
I ate it while I FINALLY finished the first episode of The Bachelorette. I have to say… I’m team Jordan 😉
And then I went back to working on some blog stuff which included two conference calls and even more planning.
Around 4:00, I laid outside for a bit and read an old-ish issue of Sports Illustrated with my dog, Fiona (okay, I didn’t necessarily invite her… she came and ran onto the lounge chair 😉 ).
For an afternoon snack, I had some mixed nuts and a slice of avocado toast that featured un toasted bread because I forgot and was HANGRY.
I facetimed one of my best friends, Maddie, for about an hour, and then went to my favorite Mexican resturant with my dad for dinner!
We split this burrito (chicken, rice, cheese, veggies, and the best tortilla EVER), and I picked at his cheese quesadilla because sharing is caring 😉
While we were eating, we saw an old family friend, so we spent some time catching up with him and his wife. Small world!
We went home, and I watched the rest of the disappointing Cavs vs Raptors game. I was rooting for the Raptors, so that’s what made it disappointing 🙁
Earlier that week, I’d gone to a resale shop for some blog props, and I picked up this book to read! It was turned into a movie that I used to love as a child, but let’s be honest- the book is way better.
I ended the night with a frozen square bar (SO GOOD OMG OMG), and continued the book. Then, I watched an episode of Prison Break, texted my friends, and called it a night!
