These almond flour chocolate chip cookies are vegan, gluten free, refined sugar free, and absolutely delicious. They’re made with easy, natural ingredients and make for a great snack.
Oh my gosh- how the heck is it already the end of March?!
Okay, to be fair, we still have 10ish days, but let me freak out. Time is FLYING by, my friends. How are your New Years resolutions going? Are they actually holding true, or are you falling of the wagon and desperately need a jump start? I’m the latter, and I’m not afraid to admit it. My one goal of the year was to get more sleep, and I’m proud to report that… I haven’t gotten any.
In fact, I’ve gotten LESS sleep so far, and it’s evident. I’m grumpy in the morning, and more dependent on coffee, which is saying something, because we all know I live for that ish. Anyways, recently I decided to go completely out of my comfort zone and wake up 30 minutes later then usual. ON A SCHOOL DAY. I usually wake up at 4:15, so waking up at 4:45 felt weird. I followed my same morning routine- workout, catch up on blog stuff, breakfast- but I arrived to school 15 minutes later and felt amazing. Sleep is a beautiful thing.
I know many people’s New Years resolution is to eat healthier, and while I’m all about eating healthy, you gotta have your cookies! I’ve been intrigued by almond flour for a while, so I decided it was time I use it in a recipe. For the flour, I used Bob’s Red Mill’s Almond Flour, which I’ve found is the best for baking. No other almond flours compare to Bob’s, and it’s ground to perfection!
Almond flour is a tricky flour to use, and it’s especially hard when you’re trying to make the recipe vegan. For the egg replacer, I used apple sauce, which I’ve found is a great egg substitute. You will need a lot of flour for this recipe, so maybe buy two bags of almond flour just in case. Oh, and these cookies require a bunch of time to cool, so be patient (I learned the hard way when I was photographing these). None the less, they’re delicious and a great, vegan and gluten free chocolate chip cookie!

- 2 cups almond flour
- 1 tsp baking powder
- 3 tbsp coconut sugar
- ½ tsp sea salt
- 1 tsp vanilla extract
- 2 tbsp apple sauce
- 3 tbsp maple syrup
- ⅓ cup melted coconut oil
- ½ cup chocolate chips
- Pre-heat your oven to 350 F.
- Mix together the flour, sugar, baking powder, and sea salt.
- Add in the oil, apple sauce, and vanilla extract. Fold in the chocolate chips as you mix, and set aside for one hour to thicken.
- Once thickened, roll into 10-12 medium sized balls. Press down with your palm, and stick in the oven for 10-12 minutes.
- Let cool for 20-30 minutes.
