This is like an almond butter sandwich, but 200x better.
That’s all I gotta say about these bad boys. Just imagine your favorite almond butter sandwiched in-between some nice jam and your favorite bread, then take that love you feel and multiply it by 20. Then subtract the multiple burnt pieces of toast you went through before you got the perfect pair, and add the apple instead. Boom- put that down on your next calc test and you’ll get an A for sure.
I’ve been meaning to try a recipe like this FOREVER, and I’m so thankful that I did. This combo was beyond easy, and don’t let the grated apple scare you off- these take maybe twenty minutes to make (including making it grammable, duh), so they’re perfect for a nice school morning breakfast if you have time. If not, then you can wait until the weekend and truly enjoy them then.
Oatmeal is always my go-to breakfast. I cannot live without it, especially during the winter when I have trouble doing simple human tasks. Seriously- in the morning, I can’t type out full sentences because my fingers are frozen (#firstworldproblems). However, the one task I have down is my oatmeal, so have no fear! Alright, lets get onto the recipe.
INGREDIENTS (Serves one):
1/2 cup oats, rolled or quick
1 cup cashew (or almond) milk
1 tsp chia seeds*
1 apple, 1/2ed
Jam and almond butter of choice
Dash of cinnamon
Dash of nutmeg
*= not mandatory, but adds a fluffiness to the oats, as well as extra nutritional benefits!
1.) Taking one of the two apple halves, grate it using a grater (if you do not have one then chopping the apple half very finely should work too). Take a paper towel and press it into the shredded apple to absorb some of the liquid (this helps when it is cooking in with the oats). Mince the grated pieces to help with the mixing process.
2.) Bring your liquid to a boil and add in the oats. Reduce to a simmer and toss in the chia seeds, cinnamon, nutmeg, & grated apple. Cover with a lid, stirring continuously.
3.) While the oats are cooking prep, chop the other 1/2 of your apple for toppings.
4.) Once the oats are done, transfer to a bowl, add in the apple, almond butter, jam, and any other toppings you’d like. Enjoy!
