Admit it, there’s a very small percent of us in the world that can actually flip an omlette well. I’ve tried for years, my mother has tried, and even my dad has tried- none of us can flip them well, and I know you’re probably in the same boat as us.
Eggs are one of my staples in my fridge and in my diet. Many people fear eggs due to their “high cholesterol levels” from the yolk. However, did you know that the yolk is the best part? Besides the insane yolk porn you receive, you also receive tons of health benefits. The yolk in one egg gives you 100% of the vitamin A, D, E, and K found in an egg.
Arugula is my personal favorite green of choice. Yes, it defiantly has a taste to it, but besides being super instagram worthy ( 😉 ), it also contains many vitamins and phytochemicals that have been shown to fight cancer-causing elements in our bodies. But really, the insta factor of the green is more important, right? 😉
With a fritatta, it’s basically a lazy girl omlette. All you have to do is add the egg mixture to a pan, add toppings, and cover with a pan! How much better can it get?!
INGREDIENTS (Serves one):
Two egg whites (or another egg)
3 tbsp water
1/2 a tomato, diced
Two cups arugula
1 tsp olive oil (or non stick cooking spray)
Salt + pepper to taste
In a bowl, whisk the egg + egg white mixture, and add the water. Mix again, and pour onto a pan that has been sprayed with non stick spray. If you’re using the olive oil for cooking, pre heat your pan so the oil can melt. If not, no need to pre heat. Once mixture is on there, if not pre heated (if it is, make sure the heat is at a medium temperature) add your arugula and tomato (or veggies of choice) and cover with a lid. Let the egg + veggie mixture sit for 10 minutes, or until the frittata is good enough for you. Once ready, turn the stove off and transfer to a plate. I added a ton of hot sauce to mine and had some toast on the side!
