I’m back with another pizza recipe!
Should we be surprised- pizza is my religion (okay, I also believe in football Sunday laziness and oatmeal, but that’s another story). Pizza and I go way back to the elementary school days, when “healthy” was an unspoken world in my dictionary. Never did I ever think I would stray away from Pizza Hut and Lunchables, but look where I am now!
With all that said, I still enjoy a good slice of pizza now and then. When I don’t want to over-indulge, like today, well- Simple Mills comes to the rescue. Simple Mills is a paleo and dairy free company specializing in baking mixes. They’re based in Chicago, and are a fast growning company. They believe in baking made healthy- something I TOTALLY stand for! When I recieved their baking mixes, I was blown away by the minimal ingredients they contain, as well as how simple they are to make. This pizza took me five minutes to prep and thirty minutes in total. Talk about easy!
Arugula, in my opinion, is a forgotten green (up there with kale, which I detail here). In salads, it adds a spicy kick. In smoothies- a burst of energy. On pizza- a touch of fanciness. Anytime someone reads “______ topped with ARUGULA, blah blah blah”, they think “COMPLICATED DO NOT TRY AT HOME” Well, those days are over. Arugula adds a kick to pizza in a way nothing else does, and combined with the squash and feta, it is a killer combo.
INGREDIENTS (Serves 12 slices):
1 package Simple Mills Pizza Dough Baking Mix, or pre-made dough of choice
1/2 cup sauce of choice- I like Trader Joe’s Traditional because of the minimal ingredients
1 yellow squash, cut up into circles
1 cup feta crumbles
4 cups arugula, chopped
1.) Prep your dough according to the instructions.
2.) When the dough ready to add the toppings, add the sauce, then the arugula, followed by the feta, then the lastly, the squash. Place back in the oven for an additional 10-15 minutes. Once ready, turn the oven off and let the pizza cool for five minutes. Enjoy!
