Finally expanding my pallet and trying out new french toast recipes- and boy am I thankful for doing so. I’ve always been a banana bread advocate, and when I was younger I’d say “BANANA BREAD IS HEALTHY BECAUSE BANANA IS A FRUIT AND WELL IT HAS FRUIT”… nutrition was not my thing back in the day needless to say. However, I’ve been wanting to try making banana bread french toast for the longest time, so I finally caved. The result… pure perfection.
Note: * means it is an optional ingrediant
Note: ** means this is meant to serve one person, so usually two-three slices of bread. However, you can double the recipe if you’re cooking for more than one person, obviously.
INGREDIENTS (Serves one**):
However many slices of bread you’d like (I love Ezekiel Bread)
6 tbsp egg whites
1/2 a banana, mashed
1/4 cup almond milk
1 tsp vanilla extract
1 tsp maple extract* (adds a ton of flavor)
1/2 tsp cinnamon*
1/4 tsp nutmeg*
Non stick cooking spray
In a bowl, combine all your ingredients (minus the bread of course) and mix well. The mashed banana will mix in perfectly, and there won’t be any banana chunks. Next, on a pre-heated stove (at about a medium heat) that has been sprayed with non stick cooking spray, did your bread in the mixture and place on to the stove. It should take about 30 seconds if the stove is fully pre heated. Once ready, flip with a spatula and cook the other side for the same amount of time. Transfer onto a plate and repeat these steps with the remaining bread. Once finished, add your toppings of choice and enjoy!
