Banana Bread Protein Waffles that are vegan, healthy, gluten free, and protein packed! They’re filled with flavor, natural sweetness, and are the perfect weekend breakfast.
Hi there! How was your weekend?
I know it’s Tuesday and all, but I’m curious. Mine was great; I hung out with some friends, worked on ze blog, and rellaaaaxed. I haven’t really relaxed in MONTHS, and it felt oh so nice. I started planning my outfits for my Italy trip (I leave in a month!) and have discovered I have no true style. My closet is a combination of Coachella meets southern preppy meets Vineyard Vines. HALPPPPPPPPPP.
When I was younger, fashion was a huge part of my life. I loved shopping (Abrocombie was my shiz), and lived for my post-birthday shopping spree. Whenever I was sad, I would ask my mom to take me shopping. News flash- she usually said no. She would tell me I should save my money and not spend it on stupid things like ANOTHER Abrocombie moose shirt. In the moment I was mad, but looking back, she was teaching me a lesson: moose shirts are tacky and I should never wear them in public. As I’ve grown older, I’ve discovered new hobbies (football, tennis, and blogging to be specific), so shopping isn’t a huge part of my life, which is why I don’t really have a style.
Something I do have? A waffle iron. I grew up using an old and broken down one that probably could’ve caught fire at anytime. When I first got into cooking, I begged my mom for a waffle iron. When my tennis coach got married, I asked him if I could have the waffle iron he was gifted (he said no). When I FINALLY got a decent waffle iron for my 15th birthday, I was the happiest foodie alive (there may have been tears shed).
Today’s recipe marks another recipe in the “I don’t have an actual banana bread recipe on my blog, BUT I do have banana bread inspired recipes” series. I just said recipe 4 times in that sentence- I really hope my english teacher didn’t read that, because she would probably cringe. BUT YOU GUYS- these waffles! They are protein packed, fluffy, less than 10 ingredients, and gluten free! I haven’t tried making these vegan yet, but don’t you worry- that adaptation will be coming very soon. Waffles for president anyone?

- 1 cup whole wheat flour (GF if necessary)
- 1 cup almond flour
- 3 tbsp coconut flour
- 1 tsp baking powder
- 1 tbsp coconut sugar
- ¼ cup protein powder (I used vanilla flavor)
- 1 tsp cinnamon
- Dash of sea salt
- ⅓ cup melted coconut oil
- 4 eggs
- 1½ cup almond milk
- 2 ripe bananas, mashed
- 1 tsp vanilla extract
- Toppings (optional):
- Maple syrup
- Peanut Butter
- Pre-heat your waffle iron.
- Mix together all the dry ingredients so get rid of clumps. Add in the wet ingredients (minus the milk), and slowly pour in the milk. Add ½ cup at a time until you reach the desired consistency. Let the batter sit for 5 minutes to thicken.
- Pour ⅓ cup of the batter onto the iron and spread out. Cook two-four minutes until crispy, then remove and repeat until the batter is gone.
