Oatmeal- it’s my all time favorite breakfast. I love it more than pancakes, scrambles, waffles… it’s just amazing. Now a days, I love getting creative with my oatmeal, but sometimes… I crave the basics!
When I was younger, my mom would make me oatmeal almost everyday, but for some reason, I stopped eating it when I got older. Why I did that I will never know! I’m so thankful I decided to start eating it again because boy do I love it.
1/2 cup rolled oats
1/2 cup milk of choice- I use almond milk
1/2 cup water
1 tsp cinnamon
1 tsp vanilla extract
1 banana, mashed (I recommend saving a few pieces for topping)
Optional Toppings- nuts, stevia, nut butters, honey, pure maple surup, or whatever you’d like!
Mix milk and water in a sauce pan along with vanilla extract. Bring to a boil, then add your oats and mashed banana. Turn down to a low heat and stir every few minutes or so. You’ll know it’s ready when all the liquid is absorbed. Remove from pot and place oatmeal in a bowl. Top with cinnamon and stir in, then add your toppings! I like adding banana, strawberries, cranberries, blueberries, greek yogurt, homemade granola- the possibilities are endless!
