Today’s “post theme” is about change.
I’ll be experiencing lots of change in the up coming year. Whether it’s getting my nose pierced, going to college, getting a new car, etc, lots of things will be different a year from now. And to be honest…that scares the living s**t out of me. If you’ve been a long time reader, then you’d know I HATE change. Like I can name millions of things I’d rather do than change up anything. If I change my morning routine by one tiny thing like if I brush my teeth before or after I do my makeup, I’m screwed for the rest of the day. If I take a different route to school, my mind goes crazy. That is one of the few things I get anxiety about (besides being late, failing school, and forgetting my license).
Change is freaking scary, but it’s sometimes necessary. I know that while the change will be painful and stressful at first, it will all be worth it in the end. So, if you’re like me and are terrified of it, I empower you to try something new. Take a new route to your sports practice. Buy a different drink at Starbucks. Do something that seems odd or off, because in the long run, it’s worth it. I’m pretty sure none of that made sense, but you kinda get the point, right?
One of my routines is how I make my oatmeal. I’ve stuck to the same method and ingredients for almost a year now, and I didn’t think it was going to change up anytime soon. That is, until I came across Zevia, which is a zero calorie, stevia sweetened soda. I’ve been drinking Zevia for YEARS now, and don’t plan on stopping. I used to be obsessed (read: OBSESSED) with Diet Coke and all things soda, so Zevia is perfect for kicking those habits. One of my favorite flavors is the Grapefruit Citrus, which will explain today’s recipe. I’ve partnered with Zevia to bring you this recipe, showing you how you can use my favorite flavor!
You’re probably thinking WHAT THE HECK SODA IN OATMEAL. Trust me, it’s worth it. The bubbliness from the soda gives the oats such a rich taste, and the sweetness from the caramelized grapefruit is the cherry on top to a perfect breakfast. Plus, this is filled with flavor, VEGAN, and GLUTEN FREE. Let’s dig in!
- ⅔ cup gluten free rolled oats
- ⅔ cup Grapefruit Citrus Zevia
- ⅓ cup almond milk
- 1 tsp chia seeds
- Optional: riced cauliflower (I LOVE ADDING THIS), protein powder, and egg whites
- For the grapefruit:
- ½ large grapefruit, sliced
- 2 tsp coconut sugar
- ½ tsp cinnamon
- ½ tsp coconut oil
- Topping ideas:
- Nut butter
- Hemp hearts
- For the oats:
- Bring the water to a boil. Add in the zevia, oats, chia seeds, and any other add-in's (I used riced cauliflower, protein powder, and egg whites). Cook until done, then pour in a bowl, add the toppings and the grapefruit, and enjoy!
- For the grapefruit:
- Melt the coconut oil on a pan and swirl around. Turn the pan to a medium heat.
- Add the grapefruit, coconut sugar, and cinnamon in. Cook until the grapefruit is brown and soft. Pour on top of the oatmeal once it's done and enjoy!
