I’m allllllll about the volume.
I’ve used zucchini. I’ve used carrots. And now, friends, I’ve ventured into the world of cauliflower oats. I have to say- these may be my favorite yet. I’ve been on a cauliflower kick ever since I got a food processor, mainly because it’s so versatile! Rice, pizza crusts, mashed. I’ve been trying so many recipes using the veggie, and I think this is my favorite.
Since trying this, I’ve been adding cauliflower to my oats almost every morning for two reasons- 1.) VOLUME!!!! 2.) A serving of veggies in the morning? Check. While I admit you may not get the same exact texture as regular oats, it tastes the same (in my opinion), so the taste of oats we all love is not lost.
I could go on a gigantic rant about how much I love oatmeal, but if you follow my Instagram, then you already know. Basically, if I could marry a food- it would be oatmeal. Okay, maybe potatoes, avocado, and salmon as well, but you get the point. So… why not get double the oats? Let’s get on with the recipe.
INGREDIENTS (Serves one):
1/2 cup rolled (or quick) oats
1 cup cauliflower
1 tsp chia seeds
1/4 cup egg whites*
1 1/2 cup liquid of choice- I used cashew milk
Topping ideas: nut butters, granola, coconut, fruit, hemp hearts, pistachios- it’s up to you!
*- if you are vegan or would prefer to skip this step, that’s fine.
1.) In a food processor (or blender), add the cauliflower. Blend until it is riced and a crumbly texture.
If you do not have a food processor, you can cut the cauliflower into very small bits, but make sure you cut everything up so you do not get random clumps.
2.) Remove from blender/food processor and steam on high for one minute. Once done, mash up with a fork and set aside.
3.) Bring your liquid to a boil on the stove top, and add in the oats, egg whites, and chia seeds. Reduce to a low heat, and mix in the cauliflower. Continue to mix well until the entire mixture has cooked, or until it is how you like it.
4.) Turn the stove off and pour your mixture into a bowl. Add your toppings, along with any spices if you choose. Enjoy!
