Let me be clear- I’m not vegan. I’ve been contemplating trying being vegan for a while, but at the moment, I’m not. However, I love making vegan recipes! They’re so tasty and I know what I’m eating.
For a while I’ve seen people use nutritional yeast as a cheese substitute, and since I’m not vegan, I didn’t think I needed to buy it. However, I decided to give it a try, and I’m so happy I did! It’s so tasty and a great cheese alternative. So look out for my recipes involving it.
I’m obsessed with making zoodles when I want pasta, but I want a lighter option. This recipe is super versatile because you can add your own toppings and there is no set measurements!
Ingredients (Serves one):
Nutritional Yeast- I usually use 1 tbsp (I use the Bragg brand and buy it at my local store)
Toppings of choice
Using a spiralizer (I use this one, I highly recommend buying one- not just for zucchini, I use it for a lot of vegetables!), simply follow directions and “spiralize” your zucchini. Add your toppings (in this photo I added grilled shrimp, chick peas, and tomatoes). Once done, sprinkle on your nutritional yeast. I know how simple this sounds, but that’s all it is. Takes about ten minutes to make, and it’s extremely tasty + filling!
