Remember those things? I sure do. Those were the days. The days when the “grow a turtle in three days by sticking it in water!” products were all the rage. The days of thinking I was cool for washing the dishes (yes, I really thought that. How I had friends I have no idea). Chia Pets were also a thing back then, and if I’m not mistaken, I thought they were THE COOLEST THING EVER. Well, since doing the dishes of course 😉
Flash forward to now, and chia related things are still cool. Just not in the same way. I’m allllllll about chia seeds, especially in pudding. What is chia seed pudding? Well, it’s one of my first recipes (I’ve grown so much), but besides that- it’s essentially a pudding created from chia seeds and milk. How you may ask? Simply mixing them together and sticking it in the fridge overnight. It’s that simple! Most people find it kind of gross, but in my opinion, there is nothing gross about it.
This parfait is nothing without the greek yogurt. I used Siggi’s Mixed Berry and Acai flavor, and boy did it not disappoint. The tartness of the yogurt, combined with the toppings you may choose to add AND the chia pudding is the ultimate trifecta. I cannot get enough.
The addition of cacao nibs to the top is an addition that cannot go un- noticed. They added a sense of crunch and chocolate every time I bit into the mixture. Cacao is the new trend, in large thanks to its benefits. It protects your heart and cardiovascular system, can control fatigue, and more. Basically- eat yo chocolate. Let’s dig in!
INGREDIENTS (Serves one):
3 tbsp chia seeds
3/4 cup cashew milk*
1 container Siggi’s, or 3/4 cup greek yogurt of choice
*= you can use a milk of choice, I just prefer cashew
1.) In a container, mix the chia seeds and cashew milk (or milk of choice) WELL. Stir stir stir. Close off with an air tight lid and let sit in the fridge overnight.
2.) The next day, remove from your fridge and layer with the yogurt and your toppings of choice if you are eating it out of a jar. If not, then mix the yogurt and chia pudding in a bowl, add your toppings, and enjoy!
