Dani_nemeh on instagram completely inspired this recipe here- not gonna lie! I’ve recently becomes chia obsessed, as you saw yesterday in my Saturday Obsessions- Chia Seeds, and decided that to be a true chia fan, I had to give chia seed puddind a try.
Was I hesitant? Oh for sure. I mean, when I was prepping it for the first time, my mom gave me the look you give a kid when you go on an amusement park ride after eating a funnel cake. I didn’t quite have that reaction, but it did not look like it was going to be good.
However, the next morning, I added the correct amount of toppings, and… wow. I’m not a pudding person, and I enjoyed this. Chia seeds become jello like when mixed with liquids, so they made the perfect consistency. Surprisingly, this was very filling and I knew it was filled with health benefits.
Now I eat this at least once a week, maybe twice, there’s really no limit. It’s super tasty and makes the perfect breakfast/dessert. I mean, pudding for breakfast? What’s NOT to love?! This breakfast is also perfect for those days when you don’t have much time, as you basically prepare it the night before and can take less than five minutes to add your toppings in the morning. Boom.
INGREDIENTS (Serves one):
1/4 cup chia seeds
1 cup liquid of choice (I use almond milk, as it adds extra flavor)
1 tbsp flaxseed (Optional, but adds more health benefits and you don’t really taste it)
1 tsp cinnamon/spices of choice (For flavor)
Toppings of choice
The night before you want this, combine all the ingredients in a bowl or a jar (that has a lid), and mix well. Make sure that everything is mixed together- this is key. If you’re using a bowl, cover it with something (I use a plastic bag) and stick it in the fridge overnight. If you’re using a jar, do the same, but make sure it has a lid. The next day it should be ready to eat, so add your toppings and enjoy! I like adding greek yogurt and a variety of fruit as my toppings, but the options are endless.
