Ahh, how I love a good chipolte bowl! I crave them so often, but if I ate them as often as I craved them, my wallet would not like me very much. However, I think I’ve perfected the perfect chipolte bowl that is healthy, easy, and delicious. I make these for my family very often, and they can’t tell the difference!
Ingredients (serves one):
Chicken- For one serving, I usually use around 2-4 oz, but I don’t measure it out (or whatever you want)
Spices- I use chili powder & cumin mostly
Qunioa (or rice)
Lettuce (Optional, but I use this if I want it to be more of a salad)
Guacamole (Optional- I don’t like guacamole but I’m sure it’d be delicious!)
Heat your pan to a medium heat and spray it with a non stick spray
Cut your chicken up into chunks, season with your spices
Place chicken on pan, turn the heat down and stir the chicken every 30 sec or so, it doesn’t really matter when, just don’t forget about it!
In a bowl, combine your corn, beans, and pico de giao. Add your quinoa (I usually use about 1/3 cup cooked qunioa) and once it’s done, your chicken. Place your desired amount of greek yogurt on top as “sour cream”. If you’re making this a salad, place your lettuce down before adding everything. Top with some salsa or guac if you’d like!
