Happy Valentine’s Day! Are you celebrating today? I’m spending the day with my girlfriends (well, those of us who are single), and we’re having a total spa day. I’m talking nails, hair, ranting- all the goods. My friends and I have spent valentines day together for the past few years, and it makes the day so much better!
As I said last week (by the way, have you made those cookies yet?), I’m not that bitter person on Valentines day. Sure, it would be nice to have a boyfriend and all, but I’m not going to get pent up about it. For now, I’m fine being single, and when the right person comes along, I’ll know. But, I’ve always been confused about the point of Valentines day. Like, shouldn’t we treat our loved ones like EVERYDAY is Valentines day? Just my two cents.
I know one of my favorite things to do when I’m with my friends is cook, and since I’m the food blogger of the group, I’m usually put in charge. This year, we decided to have a “breakfast all day” theme, and well, I knew oatmeal was on the menu. But, since my friends aren’t the HEALTHIEST people around, I decided to add switch it up and add chocolate chips. The result- pure heaven. Who knew chocolate could make such a difference?
These oats come together in under 20 minutes, are vegan and gluten free, and delicious. The chocolate adds the perfect amount of sweetness, and it’s like having dessert for breakfast, but better. Not only will these satisfy anyone, but they don’t require any prep ahead of time, and they make for the perfect breakfast.

- ½ cup rolled oats
- 1 cup almond milk
- 1 tsp coconut sugar
- 1 tbsp chia seeds
- 3 tbsp chocolate chips
- Strawberries, for topping
- Bring your milk to a boil. Add in the rolled oats, chia seeds, and coconut sugar.
- Lower the heat and cook on low, until the liquid is absorbed. Once absorbed, add in the chocolate chips. Transfer to a bowl, add more chocolate and the strawberries.
