I’m avocado crazy. Lets be honest- I eat it way too much. I swear, I’m going to turn green by the time I graduate high school.
I also love burgers, but I will admit that I’m the type of person that will eat a burger in three minutes. I don’t know why, but things that don’t involve utensils get eaten VERY quickly. However, I tried to savor this burger, because boy was it tasty. Hilary’s Eat Well was kind enough to send me coupons to try their products, and as soon as I picked up their adzuki bean burger, I knew that I would be making this burger with the avocado cream. Their products are vegan, gluten free, non GMO, and amazing. I’ve tried many veggie burgers, and I can honestly say that no burger compares to theirs. They get an 11/10 in my book.
I’ve gone through my fair share of vegan burger recipes. And… they haven’t gone well. Weather it’s the veggies I add on it, the bread, or the spread- I just can’t seem to get it right. Until now. This recipe can be vegan if you take out the greek yogurt in the avocado cream, but that is what makes it creamy. It will still taste delicious though, but of course, change it if need be! Now, lets get started.
INGREDIENTS (Serves one):
Avocado Cream Spread:
1 tsp lemon juice
1 tsp nutritional yeast
1 tbsp greek yogurt
Salt and pepper, to taste
1 Hilary’s Eat Well Adzuki Bean Burger
2 pieces of whole wheat bread (Can sub to your preference of course)
Handful of fresh arugula
2 slices of tomato
1 tbsp dijon mustard
In a bowl, mash the avocado and add the other ingredients. Stir until everything is ready and set aside. Toast up your bread and prepare your burger (follow the directions on the back of the packaging). Once the bread is toasted, add the mustard, arugula, tomato, burger, and avocado spread. Cut in pieces if you want and enjoy! It’s that simple.
