Sales are like best friends- can’t live without them!
I’ve always lived by the sales motto. Growing up, I never bought any ice skating clothing that wasn’t on sale, because I didn’t see the purpose of it. I still haven’t bought a pair of Lululemon leggings because I don’t feel like I need them. You better bet I’m only going to Starbucks if I have a gift card. As you can see, I’m a bargain shopper. I was raised that way, and I am so happy I was, because I feel that I have a better outlook on life. Most kids my age feel that buying a $4 coffee everyday is essential, while I just find it pointless. That $4 could go towards gas, your savings account, etc. I’ve learned how to save my money effectively and still buy things I want!
I’ll be the first to admit I live for a good sale. Whether it be clothing, food, cars, etc, I love saving money. For example, H&M usually has a 2 for $10 on basic, comfy shirts. I think I own ten of those shirts, and wear one daily. They’re the comfiest and softest shirts I’ve ever worn, so can you blame me?
I know this was a very random way to start off a blog post, but believe me, there was a purpose for it. The other day, I was in Whole Foods (what’s new???) and came across rice noodles that were on sale. I had never had them prior to this moment, but I’d seen TONS of dishes done using them. I decided to bite the bullet and buy them. When I first tried using them, I’m not gonna lie- I didn’t know where to begin. They don’t taste like regular pasta, but there’s no denying they’re tasty. Well, all pasta is tasty in my opinion, so maybe I’m not the most reliable source.
So, I guess you can thank sales for bringing you this recipe! Pad thai is a new dish for me, because while I’ve made it before, I’ve never blogged about it. I feel like I should have countless pad thai dishes on here because I’ve been eating it so often! It’s very versatile and comparably to almost any taste palette. For this dish, we’re using peanuts to add crunch and protein, and there’s a spicy sesame peanut dressing for tang. Plus, the noodles combine with the vegetables and bring out all sorts of flavor! This dish takes 20 minutes, requires minimal ingredients, and is completely vegan!
- 1 large carrot, peeled
- 1 carton mushrooms, washed and sliced
- 1 bell pepper, sliced
- 1 tbsp sesame oil
- ¼ cup sesame oil
- 3 tbsp creamy peanut butter
- 2 tbsp rice vinegar
- ½ tsp red pepper flakes
- ¼ tsp ginger
- Dash of salt and pepper
- ¼ tsp garlic powder
- 2 tbsp water
- For serving:
- 12 oz cooked rice noodles
- 1 cup peanuts
- Sesame seeds
- For the vegetables:
- Melt the sesame oil over a stove top and turn to a medium heat. Slice your vegetables up and first add in the carrots. Sauté for five minutes and then add in the bell pepper and mushrooms. Sauté for another ten minutes, then turn the burner off but keep the pan on there to keep warm.
- For the dressing:
- In a bowl, whisk together the dressing ingredients until smooth.
- For serving:
- Plate your rice noodles up evenly, then add the vegetables. Toss on some peanuts, sesame seeds, and anything else you'd like. Enjoy!
