These edible chocolate chip cookie dough bars are vegan, gluten free, refined sugar free, no bake, and absolutely delicious! They’re naturally sweet, made with minimal ingredients, and are the perfect dessert.
Today, I was in a Studio Barre class (aka my current OBSESSION), the instructor was very set on “the summer bod.” Every time we did a gluts movement, she screamed “think of your summer bod!” and when we finished with abs, she told the class to “spring break is only three weeks away, ladies!” Normally, I would’ve brushed this off, but it’s time I say something about it.
I’m so sick of people thinking fitness is all about your body. Sure, having a toned, skinny body is great and all, but to achieve that body, you must go through months of dieting, over exercising, and most importantly, neglecting your social life. As someone who tried this a few years ago, I can tell you first hand that “dieting” is the worst decision you’ll ever make. Instead of cutting out foods you love the most, change around a few things, incorporate more whole grains, fruits, vegetables, and healthy fats, and learn to ENJOY everything. ENJOY the process of cooking a fajita bowl. ENJOY the Barre class because you truly love the burn, not because you know you’ll look good when you go to Cabo. People always ask me “why do you like working out and eating healthy so much??” I tell them that I truly love it because I’ve learned to enjoy everything, and I find the fun in it.
Part of the fun is eating delicious, healthy recipes! Hey, that sounds like my blog motto 😉 Anyways, just because we’re eating healthy, doesn’t mean we shouldn’t sacrifice on the dessert. Dessert is not an option. Especially when it’s edible chocolate chip cookie dough.
For today’s dish, I wanted to create an easy, healthy but still sweet and delicious treat. I’m a big fan of cookie dough, so I decided to vamp it up a bit, by sweetening it with dates, adding almond butter for some healthy fats, and using brown rice flour & oat flour as the base.
You guys know I love One Degree Organic Foods Brown Rice Flour, so that’s what I choose to use today. One Degree Organic Foods is probably my favorite brand of all time because they use natural, wholesome ingredients and never add any artificial flavors. Their baking flours, granolas, and cereals are all STAPLES in my pantry.
The best part of these bars? They’re vegan, gluten free, & no bake! Once you make the batter, you just gotta freeze them and then cut em into bars. Boom- easy, healthy dessert. When you make these, don’t forget to send me a photo on Instagram @tennishealthfitness.
- ½ cup brown rice flour (or gluten free flour of choice)
- ¾ cup rolled oats
- ⅓ cup almond butter
- 8 dates, pitted and soaked
- 2 tbsp almond milk
- ½ tsp sea salt
- ⅔ cup chocolate chips
- De-pit your dates and soak them in room temperature water for 10 minutes.
- Once soaked, drain the water and add to a food processor with all the other ingredients (besides the chocolate chips).
- Pulse well until all combined and a sticky dough has formed. Fold in the chocolate chips.
- Press into an 8x8 baking pan, and freeze for two hours. Remove, cut into 8 squares, and enjoy!
