I love oatmeal. Like, I REALLY love oatmeal. I’ve had people come up to me at school and say “you eat oatmeal everyday”; yeah, I basically do. You know that 1/2 cup serving size? Yeah- I don’t follow that rule. I use at least 2/3 cup most days- no shame.
I could use two cups of dry oats and I still wouldn’t feel like it’s enough. Everyday when I finish my oats, a little sadness comes over me. It usually goes by way too quickly (insert crying emoji here). That’s where zoats come in. Zoats, also known as zucchini oatmeal, are pure genius. And yes, you read that correctly. I put zucchini in my oats, and I am not lying when I say I do not taste it at all.
The zucchini adds not only a serving of vegetables, but also a ton of volume. You can go from having a small bowl of oats to an overflowing bowl, all thanks to a little gratted zucchini. What’s not to love? I also love adding egg whites to my oatmeal, as it gives an extra boost of protein and of course, more volume. I feel like one of those “fitspo” people, but I’m not kidding- this creation is the bomb.com
If you are vegan, then you do not have to add the egg whites of course! Instead, maybe add a tbsp or two of a plant based protein if you still want a little boost.
INGREDIENTS (Serves one):
1/2 cup-2/3 cup oatmeal
1- 1 1/2 cup of liquid (depends on the amount of dry oats you use)
1/2 cup finely grated zucchini
1/4 cup liquid egg whites (or one egg white separated from the yolk)
1 tsp vanilla extract
Toppings of choice
1.) Bring the liquid to a boil on the stove top. Add the oats and vanilla extract. Stir around for a few minutes.
2.) Finely grate your zucchini, and after two minutes or so, add it to your oatmeal. Stir, stir, stir. This is key to avoiding clumps. Let the oatmeal sit covered until it is creamy.
3.) Once it is creamy, turn the stove off and let the mixture sit. Get your toppings ready and once they are, pour your oats into a bowl. Add your toppings and enjoy! I like adding fresh fruit, seeds, nut butters, granola, etc. It’s up to you!
