So… feta and I have this thing. Not sure what it’s called, but it’s definitely a thing. I eat it almost everyday, and the amount of it that I eat per day is scary. Like, I-may-need-thearpy scary. No shame.
As you guys know, I do not eat chicken a lot. I have nothing against it, but I prefer either fish or tempeh. However, I am a sucker for breaded chicken. When I was younger, my mom always made breaded chicken with cheese and a mayo dressing. Tasty, but I definitely ate too much. When I realized we had chicken to use up, I immediately thought of breaded chicken. Fast. Easy. Tasty. And… done right- healthy.
This recipe is great for cooking for a mass amount of people. I bake this when I have family coming over, and they all love it. This is a classic example of how healthy can be tasty. You would think this was cooked with 1/2 cup breadcrumbs, a cup of feta, etc. But nope. I highly recommend!
INGREDIENTS (Serves one):
2 tbsp feta cheese
1 tbsp bread crumbs
Seasonings of choice
1.) Pre-heat your oven to 400 F. In a bag, add the chicken and seasonings. Shake up and let sit for a few minutes.
2.) After a few minutes. toss in the bread crumbs and shake more.
3.) On a baking sheet that has been sprayed with non stick spray, add the chicken and place the feta on top. Bake for 20 minutes, and then broil for two-three minutes.
4.) Take out of the oven and let cool for a few minutes. Then… enjoy!
