My dream vacation? Hmmmm, that’s a toss up between Italy and Greece.
If we’re talking food though, I’d have to go with Italy. You guys know I LOVE my carbs, so of course I’d go to a country that thrives off them. I’d turn into a bread basket by the end of the trip, and I’d have zero shame about it.
I love travel. I’m the kind of person that gets stuck in routine very easily, so vacation and travel is the perfect opportunity to break that. My school emphasizes global travel, which is why I’ve been to China. My favorite trip, though, has to be France with my mom in 10th grade. Spending two weeks with her in one of our favorite countries was LIFE CHANGING. Some of the highlights of the trip include going to Monaco the day of the Grand Prix (even though we had no idea), getting to watch the race from a restaurant, driving through the countryside blasting 500 Miles, and eating great food. I mean GREAT food.
While we were there, we ate a pizza one night that still has me salivating. It was a naan pizza with figs and goat cheese. Hey, sound familiar? It should, because that’s todays recipe! Except, this one has caramelized onions, so its 3000x more amazing. Guys, if you haven’t put caramelized onions on your pizza, what are you doing with your life.
Anyways, this looks like an EXTREMELY fancy and extremely expensive dish, doesn’t it? Well, you’re wrong. This dish cost me roughly $5 to make! The best part- I bought them all from my local Whole Foods, Whole Foods Market Del Mar. I go to Whole Foods Market Del Mar weekly, and am constantly blown away by their sales. When I went a few weeks ago, these figs were on sale for $4.99 a pound, and I only got 1/3 of a pound. I got six dishes out of those figs! One of those is this pizza. Oh, and the best part? The naan crust. I’m a big advocate for naan, and this crust from Whole Foods cost me about $3 for four pieces. WINNING!
- ¼ yellow onion, sliced
- 1 tsp olive oil
- 1 tsp coconut sugar
- 1 naan crust
- 2 figs, sliced
- ¼ cup goat cheese crumbles
- 1 tbsp balsamic vineager
- On a low heat, heat the olive oil.
- Add on the onions and coconut sugar. Mix together well and let sit for twenty minutes.
- Once caramelized, top on the pizza.
- Toast the naan for two minutes at 450 degrees.
- After those two minutes, add the goat cheese, then figs, and then caramelized onions. Toast for another eight minutes, or until the cheese has melted.
- Drizzle with balsamic vinegar and enjoy!
