These peanut butter pancakes are fluffy, vegan, gluten free, and full of flavor. They’re naturally sweet and require one bowl, which makes them the perfect Sunday breakfast. Serve them with some fresh fruit, maple syrup, and enjoy!
What’s your definition of a perfect Saturday?
I was asked this recently, and my answer was simple: football, coffee, and more football. Football is one of those passions you have that you know will never pan out into anything, but it’s fun to dream out. I have countless dreams about working in the NFL, and those are my favorites.
If you didn’t know, I’m a die hard Green Bay Packers fan. When I say die hard, I mean DIE HARD. Take one glance over at me in the supermarket and you’ll realize it. Odds are, I’m either a.) wearing a Packers shirt, b.) wearing my Packers car lanyard around my neck c.) holding the lanyard in my hand, or d.) holding my phone, which is decked out with a Packers phone case. I’m not going to lie- it’s much easier being a Packers fan rather than a Browns fan. Sorry, I had to go there.
Right now, it’s Christmas Eve and I’m watching the Packers play the Vikings. It’s currently the 3rd quarter and the Packers offense has stalled significantly since the 2nd quarter. Oh shoot, we just punted, BUT Janis made a great hit. Why am I telling you this? Because I am so content with my situation, and I can’t take the smile off my face. The Christmas tree is lit, I got my dogs around me, my Pack is playing well- life is good.
You know what would make life even better? If I had a stack of these pancakes in front of me. After making them yesterday, I immediately wanted three more stacks. Scratch that- six. Ugh, what I would do for these right now. I mean… DO YOU SEE THAT FLUFFINESS?

When I set out to make these pancakes, I knew I wanted them vegan AND gluten free. To do that, I used One Degree Organic Foods brown rice flour, which is my favorite gluten free flour for cooking. One Degree Organic Foods uses wholesome, natural ingredients, doesn’t believe in artificial ANYTHING, and is overall a great company. I love using them for anything and EVERYTHING, and you will too.
These pancakes are absolutely perfect. They’re FLUFFY, less than 10 ingredients, one bowl, and absolutely delicious. I made them for my entire family this morning and they absolutely loved them, and I know you will too. When you make these, don’t forget to send me a photo on Instagram @tennishealthfitness.
- 1 cup brown rice flour (or any gluten free flour)
- 1 ripe banana, mashed
- ½ cup almond milk
- 1 tbsp coconut oil, melted
- 1 tbsp baking powder
- Dash of sea salt
- 2 tbsp creamy, all natural peanut butter
- ½ tsp cinnamon
- Pre-heat your pan to a medium heat, and melt some coconut oil on there for greasing.
- In a mixing bowl, mix the dry ingredients together, and then add in the banana, almond milk, peanut butter, and coconut oil. Mix together well and let the batter sit for 10 minutes to thicken.
- When ready, take ~1 heaping tbsp of the batter and pour it onto the griddle. Cook for 3-4 minutes, then flip and cook for 2-3 minutes on the other side. Repeat until the batter is gone.
- When finished, add your toppings and enjoy!
