These fluffy vegan strawberry spelt muffins are easy to make, vegan, refined sugar free, and absolutely delicious. They’re naturally sweet and make for the perfect snack or healthy dessert.
Today has been absolutely AMAZING. I went to a Studio Barre class, and drove home with my windows down, blasting country music. It was 67 degrees, the sun was shinning, and I was still high off my endorphins. Then, I walked into my kitchen and whipped up fluffy strawberry spelt muffins. Talk about a great day, people.
I love days where I take time for myself and don’t need to focus my energy on other people. Don’t get me wrong, I’m a total extrovert, but I love having days to myself. I’ve been spending tons of time with my friends recently, so having one day alone is much needed. The rest of my day, I’ll be working, editing photos, and shooting one more recipe. It sounds hectic, but I wouldn’t have it any other way.
I’ve noticed that taking a day to myself has made my mood much better. I’m less stressed, and more easy going. Plus, I have more energy and look forward to the next time I’m with my friends. Another key aspect in this improved mood is my diet and what I’m putting into my body. As you guys know, I believe in nutrients > calories, and that’s crucial for self care. For example, when I was making these muffins, I made sure to only use high quality flour, which is why I used One Degree Organic Foods Sprouted Spelt Flour.
I used their brown rice flour in my Fluffy Peanut Butter Pancakes, and now I’m using their spelt flour. These muffins are naturally sweet, refined sugar free, & vegan. You don’t need to much sugar because of the strawberries, but they don’t lack in flavor. Plus, they take 9 ingredients & one bowl, which is my favorite kind of baking.

- 1½ cups spelt flour
- ⅓ cup coconut sugar
- ¼ cup coconut oil, melted
- ¼ cup unsweetened apple sauce
- ½ cup strawberries, chopped
- ½ tsp sea salt
- ½ tsp cinnamon
- 2 tsp baking powder
- 1 tsp vanilla extract
- ¾ cup almond milk
- Pre-heat your oven to 400 F.
- In a large bowl, mix the flour, cinnamon, sea salt, baking powder, and coconut sugar. Add in the oil, apple sauce, and milk. Mix together well.
- Fold in the chopped strawberries until well combined.
- Spray a muffin tin with cooking spray, and spoon ~3 tbsp of the batter into each slot. Repeat until the batters gone.
- Bake for 25-27 minutes. Remove and let cool for 10 minutes.
