Yeah, I went there. I took one of America’s favorite foods- a grilled cheese- and added another fan favorite- fried eggs. I honestly have no words for how amazing this sandwich is. The way that the cheese and the yolk mix together, and how you can dip the sandwich in the runny yolk… GOSH I’M GOING CRAZY THINKING ABOUT IT.
I’m not much of a sandwich person I’ll admit, and I think it’s because I eat them so quickly that by the time I realize how truly amazing it is, I’m already done with the meal. When I had this one, however, I made sure to savor every. last. bite.
I think my favorite thing about this sandwich is just how easy it is. It took me ten minutes to make, and only three minutes to photograph 😉 I can see this becoming a staple in my diet… and yes- it’s healthy. Cheese is not the enemy, my friends. Using a healthy (i.e: a serving size) of cheese is plenty, and you still get the taste without the extra cheese. I used feta cheese in this recipe, as it is my favorite cheese of all time, but I’ve also tested it with cheddar. It works wonders. Moral of the story- this sandwich will never fail you.
INGREDIENTS (Serves one):
Two slices of bread (I use Food For Life ezekiel bread)
One serving of cheese of choice (I love using feta, but it’s up to you as to what you use)
Non stick spray
1.) Using a cup, cut out a hole in your slices of bread. This is the technique you use for “egg in a basket”
2.) Pre-heat your skillet to a medium heat, and spray with the non stick spray. Add your bread to the pan, and then crack your egg in the hole.
3.) Once the whites look ready, flip the bread + egg combo, and let sit for 30 seconds of so. Transfer to a plate, and repeat this step with the other slice of bread + egg.
4.) On the first piece of bread, add your cheese once removed from the pan and let it melt. Once the other piece of bread is done, transfer to plate and form into sandwich. Cut in 1/2, watch the yolk fall out, and be prepared to go into a food coma.
