This was what I did when I made my first rainbow bowl, and no matter how much I love my veggies roasted or grilled, this will always be one of my favorite ways to make them. So simple!
Veggies of choice
Spinach, augula, kale, or whatever you’d like
Qunioa (or whatever grain you’d wish)
Beans (I used chickpeas)
