Pancakes are a staple for me in my diet. I swear my eating has four sections: proteins, fats, carbs, and pancakes. There’s lots of good things about these pancakes, and one of them is the fact that my doctor would approve of them 😉 These are the perfect Sunday morning breakfast, or lets be honest… any meal. Really, when is it never acceptable to not eat pancakes?
Not the biggest chocolate fan, not gonna lie. However, I’ve been experimenting with chocolate powder (haven’t gotten my hands on cacao powder, so I’m setting for unsweetened cocoa powder) and when used correctly, it can turn out amazing! Obviously most people adore chocolate, but for someone like me who dislikes almost everything chocolate, this is a big deal for me.
Vegan pancakes are my favorite type of food to experiment with- mainly because I can eat the batter that drips down the side of the mixing bowl and not have a worry in the world. Again, I’m not vegan, but I love experimenting with food. Lets begin!
INGREDIENTS (Serves one):
1/2 cup gluten free flour
2 tbsp coconut flour (not necessary, but adds a fluff factor to the pancakes)
1 banana, mashed
2 flax eggs (2 tbsp flaxseed + 6 tbsp water, I explain more here)
1/4 cup unsweetened apple sauce
1/2 cup liquid of choice (I use either almond milk or coconut milk)
1 tsp baking powder
1 tbsp cocoa powder (or cacao powder)
1 tbsp stevia (or sweetener of choice)
1/2 tsp cinnamon
Non stick cooking spray
In a large bowl, combine all ingredients and mix well. I can not emphasize this enough. While this is happening, pre-heat your stove to a low-medium heat. Once mixed, spray your pan with non stick cooking spray and pour your batter on the pan. I have no measurement for how much batter I use, so it depends on how big you want each pancake. These will take about two minutes to cook, but usually you’ll be able to tell when it’s time. Once the time has passed, flip your pancake and let sit for about 45 seconds. Transfer to a plate once done, spray the pan again if needed, and repeat these steps. Once done, add your toppings and enjoy!
