I’m not one for bucket lists, but if I had to make one, eating my body weight in New York style bagels would be in the top five.
When I was younger, bagels were my everything. Everyday, I’d eat a bagel with butter, eggs, and a smoothie. It was a week day tradition that I thoroughly enjoyed. As I got older, I forgot about the beauty of a good bagel, especially in sandwich form. I have no idea why, as bagels will never go out of style (cue Taylor Swift song).
When I first made this, I was convinced that the greek yogurt, salmon, and cheese combo would be strange (to say the least). I used the greek yogurt since we didn’t have any cream cheese, and I was too lazy to go to the store. I thought: “Well, since I can use it for sour cream, why not cream cheese?” (Let’s not question what was going through my mind). However, I think this is my new favorite combo. Smoked salmon is SO UNDERRATED. I had some first in France and I will never not go without it again.
This is perfect for the school week, as it is filling and delicious. Plus, it takes five minutes to make. What’s not to love?
INGREDIENTS (Serves One):
2 oz smoked salmon
2 tbsp goat cheese
1 basil leaf
1/2 a tomato, sliced
3 tbsp greek yogurt
1.) Cut your bagel in half and spread on the greek yogurt.
2.) Add your basil, tomato, smoked salmon, and cheese. It’s that simple!
