I looovvveeee a good waffle. My preference is light and crisy with a good fruit topping. I do enjoy savory waffles as well, with some gooooddddd yolk porn goin on. I’m going to stop now, because I sound like I’m writing another poem about a food.
I got a waffle iron for my sixteenth birthday, and I’d be lying if I say that I was happy about it. No- I WAS OVER THE MOON. My family and I don’t believe in buying new replacements for things just because they’re “old.” Take my old blender for example- it was seven years old, and put up with the constant grinding of making my thick smoothie bowls. I didn’t need a new one by any standards (not complaining about it though). So, with our waffle irons- we didn’t NEED new ones. No, that’s a lie. I’m sorry mom, but our old waffle irons were so worn out that I sometimes found rust on my waffles.
I love waffles. In my opinion, they’re 20x easier then pancakes. I mean- pancakes involve so much flipping and watching. With the waffles, you can do other things while it cooks, and it’s cleaner in my opinion. I also love waffles with there’s almond butter involved, especially Barney Butter. Barney Butter is one of the best almond butter brands out there, and I written about my love for them before. For this recipe, I used the Cocoa + Coconut flavor, and my taste buds were in HEAVEN. Like that heaven feel you get when you see your food coming at a restaurant.
This recipe is not only single serving (at least for me it was), but it’s also very filling. I’ve been very into using coconut flour as my main baking flour, and I’ve found it keeps me very full from the fiber. This recipe also benefits from the healthy fats (almond butter and eggs) plus the protein (eggs, egg white, protein powder). Let’s eat!
INGREDIENTS (Serves one-two):
3 tbsp coconut flour
1 scoop protein powder of choice (I used VEGA Chocolate Protein and Greens)
1 tbsp Barney Butter’s Cocoa + Coconut Almond Butter (Or almond butter of choice)
1 egg + one egg white (or 1/4 cup egg whites)
2 tbsp apple sauce
1 tsp baking powder
2 tsp cocoa powder
1 tsp sugar (or stevia)
2-3 tbsp almond milk
2 tbsp greek yogurt
1.) Pre-heat your waffle iron according to it’s directions.
2.) In a bowl, combine all the ingredients for the waffles and stir together well.
3.) Once ready, spray your iron with non stick spray and pour a few heaping spoonfuls of the batter onto the iron. Spread out with the back of your spoon, to help it cook evenly. Close the iron and cook for two minutes or so until ready.
4.) Once done, transfer the waffle to a plate and repeat step three until the batter is gone.
5.) For the topping, mix the almond butter and greek yogurt in a bowl together. Set aside until the waffles are ready.
6.) Once the waffles are done, add the sauce and any other toppings of choice. Enjoy!
