“Hello, I’m Danielle, and I’m in a committed relationship with oatmeal”
This will be me in twenty years. I will never be over how amazing oatmeal is, and I do not discriminate. Steel cut, rolled, overnight, stovetop, microwave- you name it, imma eat it. For me, oats are the perfect breakfast. They are a good combo of carbs and fiber, and the additions I usually make add protein and fats. It’s a winner in my book.
Overnight oats can get old REALLLY fast for me, or at least until I discovered this combo. Greek yogurt is a s staple in my diet, and I love coming up with ways to use it. Move over parfaits, we got greek yogurt overnight oats.
For those days when you need more protein in your breakfast, or just fuel for a long day, these will do the trick. Greek yogurt is filled with protein, and if you’re not a fan of the tart taste, then you can add a dash of stevia or a some honey. I personally love the tartness, so I’m not really bothered by it!
I think my favorite part of this breakfast is the thickness of the oatmeal. The yogurt mixes with the oats so well, and with the addition of chia seeds (aka the secret to perfect oatmeal), this will provide your body exactly what it needs!
INGREDIENTS (Serves one):
1/2 cup greek yogurt of choice (or one 5.3 oz container if you don’t have a big tub- I like the Trader Joe’s brand for tub and Siggi’s for container)
1/3 cup cashew milk (without it, the oats won’t mix well)
1/2 tbsp chia seeds (highly recommend- makes it thick and provides essential omegas)
Toppings of choice (I like hemp hearts, nuts, nut butters, fruit, granola, etc)
1.) Combine the oats, greek yogurt, milk, and chia seeds in an air tight container and let sit over night.
2.) In the morning, pour into a bowl, add your toppings, and enjoy!
