As a high school student who loves cooking, I constantly am looking for ways to minimize my cooking time since I am extremely busy, but also enjoy things that are healthy and tasty. Roasted veggies are perfect for that, as you get a great taste, they’re super easy to make, and guess what… they’re healthy 😉 Like a lot of my recipes, all you have to do is stick in the oven and monitor. I’ve made these a lot, and I’m proud to say I’ve perfected the recipe.
Veggies of choice (I love doing zucchini, onion, bell pepper, broccoli, and brussel sprouts)
1 tsp oil (I use olive oil)
Seasoning (I use garlic powder, chili powder, and black pepper)
Pre heat oven to 350 F. In a bowl, add your chopped veggies, 1 tsp oil of choice, and any seasoning you’d like. Place on a baking sheet (I recommend adding a sheet of tin foil so they cook evenly) and stick in the oven for 20-25 minutes. That’s all it is! So simple and easy, as stated above. My family loves these when I make it for them.
