I feel like 2014 was the year of kale and quinoa… everywhere I look, something has quinoa and/or kale in, so it must be “healthy”! Whenever someone finds out I eat healthy, they resound with “so do you only eat kale and quinoa? haha” I love quinoa, and yes, it is extremely good for you. It’s a great protein source for vegetarians/vegans, a good carb source for gluten intolerant/gluten free people, and it most of all… it taste amazing AND it’s pretty to look at!
I love adding chickpeas and quinoa to salads, and I’ve recently discovered how obsessed I am with this particular salad. It’s so simple, and like all salads, extremely customizable. Unlike some salads that fit into certain “themes” (i.e Mexican, Greek, etc), this one is in it’s own category.
INGREDIANTS (Serves one):
1/2 cup cooked quinoa (or more, depending on how much you’d like)
1/2 cup roasted chickpeas (I recommend my recipe 😉 plain chickpeas are delicious as well!)
Veggies of choice- I like grape tomatoes, bell pepper, and zucchini
Kale (or whatever base you’d like)
OPTIONAL- I add hummus + some nutritional yeast sauce (I tbsp nutritional yeast + 1/2 tbsp water mixed together), but if you don’t like that, it’s fine.
Simple place your kale on a plate or bowl and place your veggies on top. Then, once your chickpeas are done roasting (or if you pre-roasted them), add those. Then the quinoa, and in the center, some hummus (optional.) I feel like I don’t need to give you an order on how to do it because it’s one of those “throw in a bowl and eat” meals that doesn’t have an order on how to do it. You can be like me and make our food pretty, or you can be like real life me and throw it all together, call it a meal, and eat it. I love this salad and I highly recommend it!
