Hi everyone- happy Tuesday!!
I originally had some almond butter stuffed muffins going out today, but decided to push that back a week or so, because I feel like I need to give you guys a much needed life update. I used to do these monthly, and completely stopped because well… things weren’t too exciting. From October-January, I was following the same schedule: wake up, workout, go to school, go home, play tennis, do homework, blog work, sleep. On the weekends, I’d recipe develop during the day and hang out with my friends at night. Life wasn’t too exciting, and I felt that writing “this month, I did the same thing” would get a bit repetitive.
But since January, life has been quite unpredictable. Going into 2017, I really wanted to break out of my shell. I’ve been an introvert for as long as I could remember, yet I always wanted to be more social and outgoing. So, I made my goal this year to flip that, and I’m off to a great start! Since I decided to do this, I’ve found that my happiness, spirits, and energy have all increased. It’s amazing how much your mood changes when you surround yourself with people you care about.
Of course, all this happiness and change was met with some heartbreak and rejection. During those times of sadness, I really leaned on my friends for support, and discovered just how important they are. I can honestly say that at the beginning of the year, I’ve never cried so much, but I’ve also never felt so loved and appreciated.
Okay, onto more exciting things! I thought I’d take the time to share some exciting things that have happened in 2017, and what’s to come. Oh, and I may or may not share my college decision at the end of this 😉
Let’s start out with Expo West! I took the week off of school last week and went up to LA for Expo West, which is one of the best decisions I’ve ever made. Not only did I get a mental reliever from school, but I also got to connect with tons of bloggers and Instagrammers. I’m not going to lie- by Saturday, I was WORN OUT, and just wanted my bed and some real food. If you went to Expo, you can relate to the fact that for two days, my diet was protein bar samples and chips. The entire weekend was packed with workout classes, parties, and not a lot of sleep. But, I wouldn’t have it any other way!
I will also point out that I drove around LA all weekend and didn’t get into a crash. Mom would be proud 😉
Now, let’s get onto the future. In May, my mom and I are taking a two week trip to Italy after my finals and before graduation, and I am SO PUMPED. It’s gonna be full of culinary, cooking classes, vineyards, and laughs. My mom and I went to France two years ago and have been dreaming of Italy ever since, so this getaway is just what we need. Furthermore, it’s our last trip before I head off to college, and the thought of that alone is exciting and scary.
Speaking of college…
I’m happy to say I’ll be attending the University of Colorado, Boulder! I’ll be majoring in Journalism, and I couldn’t be more excited. I love everything about the school and the town, so I feel like it’s the perfect fit for me. Boulder is an extremely active, health conscious town and that’s exactly what I was looking for when I started applying. Oh, and there’s a Whole Foods across the street from the campus- yes please.
As for the blog, don’t worry- it’s still gonna be going on. In fact, it’ll probably be better than ever. If all goes well, I’ll be rooming with a close friend of mine, who is more than supportive of my food and loves helping me with everything. I know I’m going to be extremely busy 24/7, so I’ve already been working on getting ahead on blog posts and what not. Gah, I’m SO happy that the process is over and I can officially say where I’ll be going. As someone who loves sharing everything, it was hard not to mention anything over these past seven months.
I want to thank you guys for all the support. Seriously- I can’t stress it enough. Your kind words, thoughts, comments, and emails never fail to make me smile and warm my heart. I wake up everyday feeling blessed to do something I love for a living, and I know I have a community that supports it whole heartedly. Here’s to the future, and all the exciting things happening!
