Tempeh- the most underrated protein option there is.
First off, I’d like to address the obvious- I am NOT vegan. I am NOT vegetarian. I haven’t eaten red meat for about eight years, and the only animal meat I eat is chicken and turkey (on Thanksgiving). As for fish, I eat all fish, but mainly tuna and salmon. I gave up red meat for many reasons. One- I love animals (fun fact: I have four dogs!), and I didn’t like the fact that I was consuming so many animal products. Two- I had heard a lot about health risks such as heart attacks and cancer that are linked to a large consumption of red meat. People may look at me and say “well, you’re still eating fish and chicken!”. Yeah, but I don’t have a problem with that. I don’t eat it often, and we shouldn’t be diet shaming. If I wanna eat them, let me eat them. If you’re vegan and you love it- great! Okay, mini rant over.
Since I don’t eat a lot of meat, I get my protein from things like yogurt, eggs, tofu, and tempeh. Ah yes, tempeh. 1st off- I’m pretty sure I’ve been pronouncing it wrong for years, so tell me how you pronounce it! Anyways, tempeh is great, man. I can’t say enough about this soy-based protein. I know some people don’t like getting their protein from soy based things, but again- I don’t have a problem with it. About 1/3 of a block contains 14g of protein, as well as healthy fats to keep you going throughout the day. I love using it for breakfast scrambles when I’m not craving eggs, or even in stir-fry’s! As you can see, I’m all in on this product.
With summer here, I’ve been allllllll about breaking out the salsa’s. Anyways, this bowl is BOMB. It combines a spicy flavor, along with a crunch from the tempeh, and a sweetness from the salsa. I love how spicy the quinoa/rice mixture gets, but it’s not too hot. Let’s dig in!
- ½ cup dry quinoa
- ½ cup brown rice
- 2 cups water
- ¼ cup mango salsa
- 1 jalapeno, diced
- 2 cups black beans
- 1 head romaine, chopped
- 16 oz tempeh, diced
- 2 avocados, diced
- 1 head purple cabbage
- 1 bell pepper, diced
- Bring your water to a boil. Add in the quinoa and rice, and reduce the heat. Let cook until the water has absorbed.
- Once it's cooked, stir in your salsa and jalapeño. Add in as much or as little as you'd like.
- Pre-heat your oven to 450 degrees. Line a baking sheet with non stick spray, and add the diced tempeh on. Bake for ten minutes, and then broil for five. Remove from the oven and enjoy.
- Add in the avocado, romaine, cabbage, bell pepper, and black beans. Serve with the tempeh and quinoa and enjoy!
