Ahh yes… granola. I used to be obsessed with this stuff, and I would eat it by the handful. As I’ve gotten older, however, I’ve noticed how much of a bad rep it gets. “Granola is fatty.” “Granola is to much of ___.” While some of these accustations are true, they only apply to the store bought brands. Store bought granola is often much higher in fat, oil, and calories than the granola you could make at home. That is why I am a firm believer in making your own granola.
Over the past few months, I have been perfecting my perfect granola recipe. It is very simple to make, and is extremely hardy + tasty. It involves minimal ingredients, which is always a plus in my book! The great thing about Granola is being able to sub out any ingredients you would like for other things. You can tweak this recipe to your choosing if you wish.
INGREDIENTS (Makes 3 1/4 cups):
3 cups rolled oats
1/4 cup almonds, chopped
2-3 tbsp organic maple syrup
2 tsp coconut oil
1 tbsp sweetener of choice
1 tsp spices of choice- I use cinnamon, nutmeg and ginger
Pre-heat your oven to 350 F. In a large mixing bowl, combine all your dry ingredients and mix them together. Then add your oil, syrup, and sweetener (if it is liquid) and mix that well. The maple syrup will want to stick to certain clumps, so as soon as your pour it, mix it all together. On a non stick baking sheet that has been placed on a baking tray, spread the mixture out. Stick it in the oven for 20-25 minutes, checking every 10 minutes or so. You’ll be able to tell when it’s done when it starts to turn golden brown. Remove from the oven, and let sit for ten minutes or so. Then… enjoy! Add it over some yogurt for a parfait or eat on its own as a snack! The possibilities are endless.
