Guys… I’m the happiest I’ve ever been.
I’ll go over that more in a blog post going up next week, but seriously: I think the last time I was this happy was at camp over the summer, but I’m always happy there. Despite all the stress and pressure I have going on with college apps and school, I still find time to smile, laugh, and live. I think the biggest difference I’ve made in my life is that I’ve realized it’s okay to take a break. Last year, I defiantly wouldn’t have spontaneously gone out with my friends on a Friday night, because I thought I needed to study. I didn’t take a break from school the entire year, and that cost me a lot of memories and happiness.
I’ve realized that there will be time for everything to get done, and everything will turn out just how I plan. My tennis coach, Blake, put it perfectly in a recent Facebook post: “Some people in this world make money to save, save, and save some more… Then there is me who makes money to spend it at this very moment to enjoy life to the fullest. Some say this isn’t the smartest idea. But I say I want to LIVE MY LIFE NOW. ” While I that saving money part isn’t that relatable, the “LIVE MY LIFE NOW” part is. I want to live and create memories, and if I sacrifice a few hours of sleep here and there, so be it.
Speaking of happiness, did you know that bananas are proven to make you happier? WOOO HAPPINESS. I was at work the other day and I was doing a go-back (basically a customer doesn’t want something when they go to the register and it’s the baggers job to take it back- we hate it), and I realized HOW DANG HAPPY I WAS. Then I remembered I had a few of these muffins for a snack, and it all made sense.
Guys- THESE MUFFINS. I’m a huge banana bread fan, as seen here in my banana bread oatmeal recipe (yet I don’t have an actual banana bread recipe on my blog??? THAT’S GOTTA CHANGE SOON) and these are basically that in muffin form! And they’re mini, which means you can have multiple in one serving!!! WOOOO YAY FOOD. I just had one- can you tell?
Ugh, the walnut crumble on top makes me wanna cry tears of joy. I freaking love walnuts, and do not eat them enough. Again, that’s gotta change. You know what else needs to change? The fact that you haven’t had these yet. Alright, let’s dig in and GO MAKE THESE K BYE.
- ½ cup whole wheat flour
- 1 tsp baking powder
- 1 tsp cinnamon
- 1 tbsp brown sugar
- 1 tsp coconut oil, melted
- 1 super ripe banana, mashed
- 1 egg
- 2-3 tbsp almond milk
- ¼ cup walnuts
- Pre-heat your oven to 350 degrees.
- Mix together all your ingredients until you get a thick batter.
- Spray a muffin tin with cooking spray, and plop the muffins in there. Leave room for the walnut crumble.
- Take your walnuts and crush them up. Sprinkle onto the muffins and stick in the oven for 20 minutes.
- Once done, remove and let cool. Enjoy!
