These mixed berry crumble bars are vegan, gluten free, and the perfect dessert! They’re made with real ingredients, require minimal ingredients, and are incredibly delicious.
The weekend has come and gone, and I am left with a sense of fulfillment, satisfaction, and I’ll be honest- a nasty hangover. Sorry guys, it’s college and I don’t wanna sugar coat it. I spent my weekend with my friends, hanging out and surviving the weather. January is the DEAD of winter here, which means lots of snow and cold. I’ve been living off oatmeal, chili, and coffee these past few weeks. Wanna know a fun fact? I still drink it iced, because the thought of hot coffee makes me cringe.
I feel like the best way to start the week off- even though it’s already Tuesday- is with some pastries and positivity. Well, maybe more pastries than positivity, because the RBF is going strong today. But guys- pastries!
So I’m going to get this out of the way and state the obvious: these ain’t pretty. They’re crumbly. They fall apart. But boy, ARE THEY TASTY.
I’d never had crumble bars before I mad these. At first, I thought they were similar to coffee cake, which is an all time underrated pastry in my books. I saw an idea for these on Pinterest and was immediately intrigued. The recipe called for lots of butter and sugar- duh- they’re crumble bars! So, I went to the kitchen and subbed coconut oil for the butter, as well as a combination of coconut sugar and cane sugar.
I can’t even begin to describe my love for these bars. They’re sweet, crumbly, vegan, & gluten free! They take seven ingredients and are the perfect dessert. The only thing is that they take a while to bake, and ultamity set once you let them cool. But trust me, it’s worth it!

- ½ cup coconut oil, melted
- ⅓ cup organic cane sugar
- ⅓ cup coconut sugar
- 2 cups gluten free flour
- ½ cup rolled oats
- ½ tsp sea salt
- ½ tsp vanilla extract
- 1 cup frozen mixed berries, thawed
- Pre-heat your oven to 350 F.
- In a large bowl, add the sugar, melted oil, and vanilla. Whisk together well.
- Add in the flour, oats, and sea salt. Once well combined, set aside ~1/4 cup of the mixture.
- Press into an 8x8 tray and spread out the thawed berries. Sprinkle on the remaining mixture.
- Stick in the oven for 45-50 minutes. Once done, let cool for an hour.
- Cut into 9 squares and enjoy!
