This one pan lemon garlic salmon & asparagus dish is paleo, gluten free, and a great 20 minute dinner. It’s filled with healthy fats, fresh produce, and when served with a side of carbs, makes for a balanced, healthy dinner!
Guys! I have exciting news!! I got a new camera- can ya tell? I made my first big girl purchase of my blogging career (can I call it a career yet) and upgraded from my six year old Canon T3 to a Canon 70D!! Happy early high school graduation to me. I didn’t think I’d see much change, and I got it mostly so I could start shooting video, but HOLY COW. The quality is INSANE. I’ve only had it for about a week and I’m head over heels.
Anyways, happy Friday! I’m on spring break this week and soaking up every moment. I’ve spent my time blogging, playing tennis, hanging out with friends, and… college shopping. Yup. My mom suggested it to me last week and I just went holy shit… it’s getting real. Is it bad my roommate and I already have our color scheme picked out?
Anyways, the weather here’s been great and San Diego perfect, of course. I love the spring here because it’s usually around 70 degrees and sunny, but it’s not too hot that I dread going outside. Another thing I love? Spring vegetables! Spring vegetables are here, people! All hail peas, onions, and the star of today’s show… asparagus!
Asparagus is either one of those vegetables you either love or hate. I LOVE it, especially when done well. I like to keep the flavors pretty simple, and today’s dish is a perfect example of that. I think that asparagus has a unique but tasty flavor, so it doesn’t need a ton of spices to boost it. I also love how colorful it is- WOULD YA LOOK AT THAT COLOR.
I’ve been eating salmon since I could remember, and I’ve had countless variations. However, I can safely say this is one of my favorite, and easiest! Lemon garlic salmon. Super easy, SUPER tasty. Pair it with the asparagus for a one pan, 20 minute dinner. I highly recommend serving this with some potatoes or rice for a balanced, healthy dish. Even though I didn’t show it in the photos, I had a big potato with this dish as well, because as I said in this post, I’m all about ze carbohydrates.

- 12 oz Atlantic salmon
- 2 tbsp lemon juice
- 2 tsp minced garlic
- ½ tsp garlic powder
- ½ tsp sea salt
- 1 lb asparagus
- 1 tbsp olive oil
- ½ tsp sea salt
- Pre-heat your oven to 400 F.
- Make your salmon marinade by whisking together all the ingredients.
- Spread your salmon out on a baking tray and spread on the marinade. Spread your asparagus evenly next to it, and drizzle over the olive oil and sea salt. Make sure they're coated evenly.
- Bake for 15 minutes, or until the salmon is flaky and asparagus is tender. Serve with some rice or potatoes and enjoy!
