I have done it- I have mastered the art of the paleo pancake. I am not paleo, but one of my first ever recipes I tried was the classic banana and egg pancakes. It was tasty, but as I got more into cooking, I discovered coconut flour. Coconut flour, to put it bluntly, is a bakers god. It makes any baking recipe extremely fluffy without making it dry.
These pancakes, even though they are paleo, are the fluffiest pancakes I’ve ever created. Not going to die, when I made these for the first time, I made a second batch the next day because they were so tasty. They’re extremely filling as well, and pack a ton of fiber, protein, and nutritional benefits. Get ready to be blown away!
Ingredients (Serves one):
1/4 cup + two tbsp coconut flour
1 banana, mashed
1 tsp baking powder (Omit if you’re following a strict paleo diet)
1 tsp vanilla
1 tsp cinnamon
In a large mixing bowl, combine all your ingredients and mix well. Pre-heat a non-stick pan (or use an oil/oil spray for cooking so it does not stick) and turn the heat to a medium setting. Once everything is mixed, take a spoonful or so and pour it on to the pan. Spread the batter around so it can thin out (or if you’re like me, you get more pancake). It will take about two minutes to cook because the mixture will be thick, so make sure you’re not rushing. Once ready, it will flip over very easily and have a nice golden finish on the cooked side. Let that sit for about one minute, and then transfer to a plate. Repeat these steps until all your pancakes are ready, add your toppings, and devour!
