These peanut butter chocolate chip blondies are vegan, gluten free, refined sugar free, and full of flavor. They make for a great dessert or even better afternoon pick me up!
Hi guys! Happy Tuesday! How was your weekend? I spent mine at Coachella with two of my good friends and we had a blast dancing our butts off, eating delicious food (we were lucky enough to have VIP tickets and they had a VEGAN ICE CREAM stand!!! I got the salted Carmel with cacao nibs which was the best $12 I’ve ever spent) and have some much needed vacation time. Despite the lack of sleep (we got back to our hotel between midnight-3 AM every night), it was a blast. Now, I have an AP test next week, a few final projects, and boom- I’m off to Italy and graduating in a little over a month!
I’ve been on a life high recently. Since committing to a college, I’ve been stress free and life has felt like a breeze. I know that eventually, I’ll have to actually GO to the college, return to a heavy course load, and feel the inevitable stress, but for now, I’m enjoying my last trimester senior attitude. I still care, but I no longer fret about everything.
My motto all of senior year was “could be studying but probably baking” SO TRUE. I love coming home to bake- it’s a form of therapy for me! Going off the topic of “therapy”, my number one comfort food is peanut butter. I think that’s how a lot of people are as well, which makes sense. The healthy fats and creaminess of it is like a warm hug from my mom. So, I’ve combined two comfort things (baking and peanut butter) to bring you these peanut butter chocolate chip blondies!
These bad boys are the ultimate dessert, but personally, I like having them as a mid-afternoon snack. There’s nothing a lil PB & chocolate can’t fix. Oh, would you believe me if I told you these are vegan, gluten free, & refined sugar free? I subbed regular sugar for coconut sugar and trust me- it’s worth it. You do need to let these cool a while, but it’s all worth it. Lots of self restraint may be involved, but just trust me 😉

- 1 cup gluten free flour
- ¼ cup almond flour
- 1 tbsp corn starch
- ½ cup coconut oil, melted
- ⅔ cup almond milk
- 1 tsp baking powder
- ½ tsp sea salt
- ⅔ cup creamy peanut butter
- ½ cup coconut sugar
- ½ cup dark chocolate chips
- Pre-heat your oven to 350 F.
- Mix together the flours, corn starch, sea salt, baking powder, and coconut sugar. Add in the peanut butter, melted coconut oil, and almond milk. Mix well, and add more milk if necessary.
- Fold in the chocolate chips. Greece an 8x8 pan with cooking spray and spread the batter out into it. Spread evenly and cook for 25 minutes.
- Remove and let cool for 30-35 minutes. Cut into 9 squares and enjoy!
