Recently- and I have no idea how- I’ve begun to like nuts. Not obsessed yet, but I’m getting there 😉 Nuts are so great for you, and I’ll always regret the days when I didn’t eat them. My personal favorite is almonds, incase you’re wondering. I decided that since I’m new to the nut game, my first nut recipe should be a pancake one of course!
Pancakes are a go to for me, and I knew this would be a great experiment. Believe me when I say these are super easy to make, and they are extremely satisfying! I added some almond butter on the top (OBSESSED… creamy > crunchy!) and I got the best of both worlds with the peanut powder in the pancake batter and the gooey almond butter as a topping!
I mean, look at the creaminess 😉
INGREDIENTS (Serves one):
1/2 cup gluten free flour of choice
1 banana, mashed
2 flax eggs- 2 tbsp ground flaxseed + 6 tbsp water, mixed and chilled together for a few hours
2 tbsp coconut flour
2 tbsp peanut flour
1/4 cup unsweetened apple sauce
1/2 cup liquid of choice
1 tsp baking powder
1/4 tsp cinnamon
In a large mixing bowl, combine all your ingredients and mix WELL. Pre-heat your stove to a low-medium heat and spray with non stick cooking spray. Once ingredients are mixed, place two large spoonfuls on the stove, and spread it around with the bottom of the stove to create a circle. Let sit for two or so minutes (you’ll be able to tell when it’s ready) and when ready, flip! Let that sit on the other side for a minute or so, and then transfer to plate. Repeat all these steps until the batter is done and… voila! Add your toppings of choice (I HIGHLY recommend almond butter or some type of yogurt) and devour.
