Hi hi HIIII!!!! How was your weekend????
Mine was pretty normal. I hung out with some friends, got college apps done, did a few recipes for the blog, studied for a test- the same old same old. I cannot believe I’m a FREAKING SENIOR IN HIGH SCHOOL. I remember ninth grade like it was yesterday. Wait, it was yesterday, wasn’t it?
In less than a year, I’ll be off to a small dorm room with limited fridge space and less closet space, but I’ll be making memories that will last a lifetime, and I cannot wait. But, let’s stay in the present, because I am not ready for that. If you guys want an update on the college apps, here it is: I’ve submitted my early decision application to my top school, as well as my early action to a few of my other top schools. I’m not going to mention where because a.) I don’t want to jinx it and b.) I’m stressed about it enough, and I know that if I blog about it, I’ll think about it more than I want too. Let’s stick with this recipe for now.
This recipe is the BOMB.COM. Okay guys, I know you’re probably a bit confused- apples in a salad??? Isn’t that a summer recipe? Yeah, it is. But, I’m putting a fall twist on it and making it a cozy, fall inspired chopped salad. A “fall chopped salad” is probably one of the biggest oxymoron there ever was, because chopped salads scream summer. Whateva.
This bowl is PACKED with flavor and nutrients. It makes for the perfect side to a dinner dish, or you can make this a fuel meal and pair it with a warm slice of bread or something of that sorts. I know I’d do that, because I love bread, and I love chopped salads.
I’ve always been scared to add apples to a salad, and I have no idea why. This salad is freaking delish, and the crunch from the roasted chickpeas is an added bonus (if you add them, which I highly recommend). Alright, let’s dig in!
- 3 heads romaine, chopped
- 3 large apples, diced
- 1 cup pecans, chopped
- For the dressing:
- ¼ cup olive oil
- ¼ cup lemon juice
- 3 tbsp balsamic vinegar
- 2 tbsp garlic powder
- ½ tsp sea salt
- Add ins:
- Roasted chickpeas (simple recipe here)
- Hemp hearts
- For the salad:
- Chop your pecans up finely.
- In a bowl, toss your chopped apple with the romaine and pecans.
- Add your dressing and any other add ins you'd like. Enjoy!
