WARNING: THESE ARE EXTREMELY UGLY BUT I SWEAR THEY ARE AMAZING SO DON’T LET THAT CHANGE YOUR OPINION ON THEM
I love pancakes. There’s so many recipes for them, and I love experimenting with all of them. One of my favorite recipes is protein pancakes. Depending on the powder you use, you can get as much as 30 grams of protein (that’s what I get) or even more! Yes, I do realize how ugly these are, but don’t judge it before you try them! These are extremely filling, they pack a ton of flavor, and they’re the perfect Sunday breakfast.
INGREDIENTS (Serves one):
6 tbsp egg whites
1 scoop protein powder of choice (I use Cellucor Chocolate Chip Cookie Dough– it’s amazing!)
1/2 a mashed banana
2 tbsp gluten free flour of choice
1/2 tsp baking soda
1/2 tsp vanilla extract
Dash of cinnamon & spices of choice
1/2 cup liquid of choice
Mix all ingredients together in a large bowl. Spray your pan with non stick spray, and pour batter on there. You’ll be able to tell when they’re ready based on the edges. Once ready, flip then pancake and wait for it to be ready. Transfer to plate when finished, spray pan again, and repeat! While the pancakes cooking, stir the batter so it doesn’t clump together. Once finished, add your toppings- I use a little maple syrup and some other fruit. In these photos, I didn’t have greek yogurt, but I LOVE adding greek yogurt as a “frosting”. I’m obsessed with this recipe, and depending on your powder, you’ll get different flavors.
