Pizza makes me very happy. As a kid, I waited for the days when Pizza Hut would have their stuffed crusts. Gah, I lived for the days of coming home from ice skating and having two (yeah, I didn’t mess around) slices of pizza waiting for me. Thooosssseeeee were the days. Today, however, I look forward to a bowl of roasted vegetables with tempeh and potatoes as well.
With all that said, I still enjoy a good slice of pizza now and then. When I don’t want to over-indulge, like today, well- Simple Mills comes to the rescue. Simple Mills is a paleo and dairy free company specializing in baking mixes. They’re based in Chicago, and are a fast growning company. They believe in baking made healthy- something I TOTALLY stand for! When I recieved their baking mixes, I was blown away by the minimal ingredients they contain, as well as how simple they are to make. This pizza took me five minutes to prep and thirty minutes in total. Talk about easy!
My family seems to love provalone cheese, as we always have it lying around, ready to use. I didn’t know what cheese I wanted for this recipe exactly, but I’m SO glad I went with this one. Combined with the sauce and the sundried tomatoes, it made for the perfect pizza. Let’s dig in!
INGREDIENTS (Serves 12 slices):
1 package Simple Mills Pizza Dough baking mix (or pre-made dough of choice)
1/2 cup pizza or pasta sauce- my personal favorite is Trader Joes Traditional
1 cup provolone cheese
1 cup sun-dried tomatoes
1.) Cook pizza dough according to the directions.
2.) When it’s time to top the pizza, add the sauce, then the cheese, and lastly, the sun-dried tomatoes. Stick back in the oven for ten-fifteen minutes, until the cheese is browned. Take out of the oven and allow to cool for five minutes. Enjoy!
