I AM OBSESSED WITH BAKED OATMEAL. There- I said it. You know how some peoples comfort food is chocolate? Mine is baked oatmeal. Yup, that’s how weird/obsessed I am. I love making it on Sunday mornings, or really any time of day if we’re being honest.
Recently I’ve been trying out recipes with pumpkin (as you may be able to tell) and I never thought to put it in my baked oatmeal. Why? I honestly don’t know. HOLY COW IT IS AMAZING. The consistency is so good, and it taste just like fall (fun fact- fall and winter are my favorite seasons).
1/2 cup oats
1 cup liquid of choice
1/4 cup canned pumpkin
1/4 cup apple sauce
1 tsp baking powder
1/2 tsp vanilla extract
Dash of cinnamon
Dash of pumpkin pie spice
Optional- toppings of choice (I like strawberries personally)
Pre heat your oven to 400 F. In a large bowl (make sure it’s large because with the pumpkin and apple sauce, it will rise a lot and we don’t want it to over flow, trust me!) that is sprayed very well with non stick spray, combine all your ingredients and mix them together. Let the mixture sit for 10-15 minutes. After 10-15 minutes, place in your oven. Let it cook for about 20-30 minutes, depending on the consistency you like (I personally leave it in for 30 minutes because it becomes super cake like and it taste amazing to me). Once it’s done, turn your oven off, take it out, and let it sit for about five minutes to cool off. Once it’s done, you can enjoy!
