I’ll be the first to admit that I’m not the biggest fan of pumpkin. However, my mom had some canned pumpkin left over one day, and I decided to experiment with it. Thus, pumpkin spice oatmeal was born! These are so tasty and fall like- I can’t get enough of them. I love this during the fall, but I’d make this any time of year!
1/2 cup rolled oats
1/2 cup milk of choice- I use almond
1/2 cup water
1/4 cup canned pumpkin
1 tsp cinnamon
1 tsp pumpkin pie spice
1 tsp vanilla extract
Toppings of choice
In a pot, combine vanilla extract, milk, and water. Bring the mixture to a boil. Once boiling, add oats, canned pumpkin, pumpkin pie spice, and cinnamon. Reduce heat, cover with a lid, and stir every minute or so. You’ll know it’s done when all the liquid is adsorbed. Once done, transfer into a bowl. Add your toppings and enjoy!
